Classic Buttermilk Pancakes

Fluffy and tender, these Classic Buttermilk Pancakes make a perfect breakfast staple with a rich, tangy flavor and golden-brown finish.

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat the egg with buttermilk, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; some lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  6. Flip and cook the other side until golden brown, about 1-2 minutes more.
  7. Serve immediately with butter and maple syrup or your favorite toppings.

Notes

For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
