Chicken Orzo

Chicken Orzo is a comforting, flavorful one-pan dish combining tender chicken pieces with tender orzo pasta in a savory broth, perfect for a quick and satisfying dinner.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 ½ cups chicken broth
  • 1 cup cherry tomatoes, halved
  • ½ cup Parmesan cheese, grated
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried oregano

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken pieces, season with salt, pepper, and oregano, and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add chopped onion and sauté until translucent, about 3 minutes.
  4. Add minced garlic and cook for another 30 seconds until fragrant.
  5. Pour in the orzo and toast it for 1-2 minutes, stirring frequently.
  6. Add chicken broth and bring to a boil. Reduce heat to a simmer and cook uncovered for 8-10 minutes until orzo is tender and most of the liquid is absorbed.
  7. Stir in the cooked chicken and cherry tomatoes, cooking for another 2-3 minutes until heated through.
  8. Remove from heat and stir in Parmesan cheese and fresh parsley.
  9. Taste and adjust seasoning with salt and pepper as needed. Serve warm.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving or garnish with additional Parmesan and parsley.
