Chicken and Asparagus

A simple and healthy dish featuring tender chicken breast sautéed with fresh asparagus, perfect for a quick and flavorful weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/4 cup chicken broth
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  3. Add the chicken breasts and cook for 6-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon olive oil and garlic. Sauté for about 30 seconds until fragrant.
  5. Add the asparagus pieces and cook for 4-5 minutes until tender-crisp.
  6. Pour in the chicken broth, lemon juice, and add lemon zest. Stir to combine and let it simmer for 2 minutes.
  7. Return the chicken breasts to the skillet and spoon the sauce and asparagus over the top. Cook for another 2 minutes to reheat the chicken.
  8. Sprinkle with fresh parsley if using, and serve warm.

Notes

For extra flavor, serve with a side of garlic mashed potatoes or a light quinoa salad. Adding a sprinkle of Parmesan cheese on top can also enhance the dish.
