Cherry Balsamic Chicken is a flavorful dish combining juicy chicken breasts with a tangy cherry and balsamic glaze, perfect for a delicious and elegant dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cherries, pitted
  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side, until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add cherries, balsamic vinegar, and honey. Stir well and cook for 5-7 minutes until the cherries soften and the sauce slightly thickens.
  5. Return the chicken to the skillet, spoon the cherry balsamic sauce over the top, and simmer for 2-3 minutes to heat through.
  6. Garnish with fresh thyme or rosemary if desired. Serve warm.

Notes

For extra depth, add a splash of red wine to the sauce while cooking or serve with creamy polenta or roasted vegetables.
