A creamy and spicy Cheesy Jalapeno Corn Casserole that combines sweet corn, melted cheese, and fresh jalapenos for a flavorful side dish perfect for any meal.

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 2-3 jalapenos, finely chopped (seeds removed for less heat)
  • 1/4 cup chopped green onions
  • 1/2 cup mayonnaise
  • 1/2 cup crushed cornflakes or breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine corn kernels, shredded cheddar, cream cheese, sour cream, mayonnaise, chopped jalapenos, and green onions. Mix until well blended.
  3. Add garlic powder, salt, and black pepper to the mixture and stir.
  4. Transfer the mixture into the prepared baking dish and spread evenly.
  5. Sprinkle the crushed cornflakes or breadcrumbs evenly over the top for a crispy crust.
  6. Bake for 30-35 minutes or until the casserole is bubbly and the topping is golden brown.
  7. Let the casserole cool for 5 minutes before serving. Enjoy warm!

Notes

For extra creaminess, add 1/4 cup of Monterey Jack cheese or top with sliced jalapenos before baking for more heat.
