Cheesy Cheddar Green Bean Casserole

A creamy and flavorful green bean casserole loaded with sharp cheddar cheese and topped with crispy breadcrumbs for a perfect side dish.

  • 1 lb fresh green beans, trimmed and cut in half
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 3/4 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9 inch baking dish.
  2. Bring a large pot of salted water to a boil. Add green beans and blanch for 4 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a medium saucepan, melt butter over medium heat. Add chopped onion and cook until softened, about 3 minutes.
  4. Add minced garlic and cook for 1 minute until fragrant.
  5. Stir in flour and cook for 1-2 minutes to form a roux, stirring constantly.
  6. Gradually whisk in milk and heavy cream. Continue cooking, whisking, until sauce thickens, about 3-4 minutes.
  7. Add salt, pepper, paprika, and shredded cheddar cheese, stirring until cheese is melted and sauce is smooth.
  8. Combine the blanched green beans and cheese sauce in the prepared baking dish, stirring gently to coat evenly.
  9. In a small bowl, toss breadcrumbs with olive oil until evenly coated, then sprinkle over the top of the casserole.
  10. Bake for 20-25 minutes until bubbly and golden brown on top.
  11. Remove from oven and let rest 5 minutes before serving.

Notes

For extra crunch, add some fried onions on top before baking or substitute panko breadcrumbs for a lighter texture.
