Cashew Chicken Stir Fry

A quick and flavorful Cashew Chicken Stir Fry featuring tender chicken, crunchy cashews, and vibrant vegetables tossed in a savory sauce, perfect for a healthy weeknight dinner.

  • 2 tablespoons vegetable oil
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup cashews, unsalted
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 teaspoon sesame oil
  • Cooked jasmine rice, for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add chicken pieces and stir-fry until golden and cooked through, about 5-6 minutes.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and ginger; sauté for 30 seconds until fragrant.
  5. Add red bell pepper and broccoli; stir-fry for 3-4 minutes until vegetables are crisp-tender.
  6. Return chicken to skillet and stir in cashews and green onions.
  7. In a small bowl, combine soy sauce, oyster sauce, and hoisin sauce; pour over chicken and vegetables.
  8. Add cornstarch slurry and stir constantly until sauce thickens, about 1-2 minutes.
  9. Drizzle sesame oil over the stir fry, toss to combine.
  10. Serve hot over cooked jasmine rice.

Notes

For extra heat, add a pinch of red pepper flakes or a dash of sriracha sauce when adding the sauces.
