Cajun Salmon & Mango Salsa

This Cajun Salmon Mango Salsa is a vibrant and flavorful dish combining spicy, perfectly seasoned salmon with fresh, tropical mango salsa for a refreshing and hearty meal.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Rub the salmon fillets evenly with olive oil and sprinkle both sides with Cajun seasoning.
  3. Place salmon on grill or skillet and cook for 4-5 minutes per side, or until cooked through and flaky.
  4. While salmon cooks, prepare the mango salsa by combining mango, red bell pepper, red onion, jalapeño, cilantro, and lime juice in a bowl. Season with salt and pepper.
  5. Serve the grilled Cajun salmon topped generously with the mango salsa.
  6. Garnish with extra cilantro and lime wedges if desired.

Notes

For added depth, marinate the salmon in Cajun seasoning and olive oil for 15 minutes before cooking. Serve with steamed rice or a fresh green salad.
