Cadbury Mini Egg Cookies

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 cups Cadbury Mini Eggs, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Fold in the chopped Cadbury Mini Eggs gently into the dough.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10–12 minutes, or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra gooey centers, slightly underbake the cookies and let them set on the baking sheet; using full Mini Eggs rather than chopped will create delightful pockets of chocolate.
