Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 2 cups chopped Cadbury Mini Eggs (about 10-12 eggs)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Fold in the chocolate chips and chopped Cadbury Mini Eggs gently to distribute evenly.
  7. Spread the cookie dough evenly into the prepared baking pan, smoothing the top.
  8. Bake for 25-30 minutes or until the edges are golden and a toothpick inserted near the center comes out clean.
  9. Let cool completely in the pan before cutting into bars.

Notes

For extra gooey bars, slightly underbake by 2-3 minutes and let them set as they cool. You can also drizzle melted white chocolate over the top for added flavor and decoration.
