Cabbage Roll Soup captures all the comforting flavors of traditional cabbage rolls in an easy-to-make, hearty soup perfect for cozy dinners.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup cooked white rice
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon.
  2. Add chopped onion and garlic to the pot; sauté until softened and fragrant, about 3-4 minutes.
  3. Stir in the chopped cabbage and cook for another 5 minutes until it begins to soften.
  4. Add diced tomatoes, tomato paste, beef broth, oregano, paprika, salt, and pepper. Stir to combine.
  5. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Stir in the cooked white rice and cook for an additional 5 minutes to heat through.
  7. Adjust seasoning if needed. Serve hot, garnished with chopped fresh parsley if desired.

Notes

For extra depth of flavor, add a splash of Worcestershire sauce or a pinch of red pepper flakes when simmering. Serve with crusty bread for a complete meal.
