Cabbage & Kimchi Fried Rice

Cabbage Kimchi Fried Rice is a flavorful and spicy Korean-inspired dish combining tangy kimchi, crunchy cabbage, and savory fried rice for a quick and satisfying meal.

  • 2 cups cooked rice (preferably day-old)
  • 1 cup kimchi, chopped
  • 1 cup cabbage, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • 1 egg (optional)
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced onion and minced garlic; sauté until fragrant and translucent, about 2-3 minutes.
  3. Add chopped kimchi and sliced cabbage; cook for 3-4 minutes until cabbage softens slightly.
  4. Stir in gochujang and soy sauce, mixing well to combine all flavors.
  5. Add cooked rice to the pan; break up any clumps and stir-fry for 5 minutes until heated through and well mixed.
  6. Drizzle sesame oil over the rice and stir in sliced green onions; season with salt and pepper to taste.
  7. In a separate pan, fry the egg sunny-side up or to your preference, if using.
  8. Serve fried rice hot, topped with the fried egg and garnished with sesame seeds.

Notes

For extra protein, add diced cooked chicken or tofu. Serve with a side of pickled vegetables or a simple cucumber salad.
