Buffalo Chicken Quinoa Bowl

This Buffalo Chicken Quinoa Bowl combines tender spicy chicken with protein-packed quinoa and fresh vegetables for a flavorful, healthy meal that’s perfect for lunch or dinner.

  • 1 cup quinoa, rinsed
  • 2 cups water or chicken broth
  • 2 boneless, skinless chicken breasts
  • 1/2 cup buffalo sauce
  • 1 cup chopped romaine lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded carrots
  • 1/2 cup diced cucumber
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: ranch or blue cheese dressing for drizzling

Instructions

  1. Cook the quinoa by bringing 2 cups of water or chicken broth to a boil. Add rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed.
  2. While quinoa cooks, season the chicken breasts with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken breasts for 5-7 minutes per side until fully cooked and no longer pink inside.
  4. Remove chicken from skillet and shred using two forks.
  5. In a bowl, toss the shredded chicken with buffalo sauce until well coated.
  6. Assemble bowls by dividing quinoa evenly, then topping with buffalo chicken, romaine lettuce, cherry tomatoes, shredded carrots, diced cucumber, and crumbled blue cheese.
  7. Drizzle with ranch or blue cheese dressing if desired and serve immediately.

Notes

For extra flavor, marinate the chicken in buffalo sauce for 30 minutes before cooking, and add avocado slices to the bowl for creaminess.
