  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • Vegetable oil for frying
  • 1/2 cup sugar mixed with 1 tsp cinnamon for coating

Instructions

  1. In a small saucepan, simmer the apple cider over medium heat until reduced to about 1/4 cup. Let cool.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the reduced apple cider, buttermilk, egg, and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  6. Using a small cookie scoop or spoon, carefully drop dough balls into the hot oil, frying in batches to avoid overcrowding.
  7. Fry donut holes for 2-3 minutes or until golden brown, turning occasionally for even cooking.
  8. Remove with a slotted spoon and drain on paper towels.
  9. While still warm, toss the donut holes in the cinnamon sugar mixture until evenly coated.
  10. Serve warm and enjoy!
