Amish Breakfast Casserole

A hearty and comforting Amish Breakfast Casserole featuring layers of eggs, sausage, bread, and cheese, perfect for a family brunch or special occasion morning.

  • 1 pound breakfast sausage
  • 10 slices white bread, crusts removed and cubed
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon dried parsley (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, cook sausage over medium heat until browned and cooked through. Drain excess fat.
  3. Layer half of the bread cubes in the bottom of the prepared dish.
  4. Sprinkle half of the cooked sausage evenly over the bread cubes.
  5. Sprinkle 1 cup of shredded cheddar cheese over the sausage layer.
  6. Repeat the layers with the remaining bread cubes, sausage, and cheese.
  7. In a large bowl, whisk together eggs, milk, salt, pepper, dry mustard, and parsley until well combined.
  8. Pour the egg mixture evenly over the layered casserole.
  9. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes or until eggs are set and the top is golden brown.
  10. Allow casserole to cool for 5 minutes before serving.

Notes

For extra flavor, try adding sautéed onions and bell peppers to the sausage layer or top with chopped fresh herbs before serving.
