Scale
  • 1 lb (450g) medium shrimp, peeled and deveined
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1/2 cup snap peas
  • 2 green onions, sliced
  • 1 tsp grated fresh ginger
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Instructions

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add shrimp to the skillet and season lightly with salt and pepper. Cook for 2 minutes per side until pink and cooked through. Remove shrimp and set aside.
  4. In the same skillet, add broccoli, bell pepper, and snap peas. Stir-fry for 3-4 minutes until vegetables are crisp-tender.
  5. Return shrimp to the skillet, pour the honey garlic sauce over the shrimp and vegetables, and toss to combine. Cook for another 1-2 minutes until sauce is slightly thickened.
  6. Remove from heat and garnish with sliced green onions.
  7. Serve immediately over cooked rice or noodles.

Notes

For extra heat, add a pinch of red pepper flakes to the sauce or serve with sliced fresh chili peppers.
