Delicious Zucchini Brownie on a Plate

These fudgy zucchini brownies are a delicious and sneaky way to add extra veggies to your dessert. They’re moist, chocolatey, and surprisingly easy to make!

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini, excess moisture squeezed out
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, combine melted butter, granulated sugar, and brown sugar. Beat until well combined.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the shredded zucchini and chocolate chips.
  7. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let cool completely before cutting into squares.

Notes

For extra fudgy brownies, underbake slightly. Serve with a scoop of vanilla ice cream or a dusting of powdered sugar.
