Zesty Lemon Rice Krispie Treats

Bright and tangy, these Zesty Lemon Rice Krispie Treats combine the classic crispy sweetness with a refreshing lemon twist for a delightful snack or dessert.

Ingredients

  • 6 cups Rice Krispies cereal
  • 4 cups mini marshmallows
  • 3 tablespoons unsalted butter
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add the mini marshmallows and stir until completely melted and smooth.
  3. Remove the saucepan from heat and stir in the lemon zest, lemon juice, vanilla extract, and a pinch of salt.
  4. Quickly add the Rice Krispies cereal to the marshmallow mixture and gently fold until all cereal is evenly coated.
  5. Press the mixture firmly into a greased 9×13-inch pan using a spatula or wax paper.
  6. Allow to cool completely at room temperature before cutting into squares.

Notes

For added texture, sprinkle some poppy seeds or white chocolate chips into the mixture before pressing into the pan.
