Ingredients

Scale
  • 9-12 lasagna noodles (oven-ready or regular)
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large bell pepper (any color), diced
  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1 (10 oz) package fresh spinach, chopped (or 1 cup frozen, thawed and squeezed dry)
  • 24-28 oz jar marinara sauce (or homemade)
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). If using regular lasagna noodles, cook according to package directions, then drain and rinse with cold water to prevent sticking.
  2. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, zucchini, and yellow squash. Cook for 8-10 minutes, or until vegetables are tender-crisp. Add minced garlic and spinach, cook for another 2-3 minutes until spinach wilts. Remove from heat.
  3. In a medium bowl, combine ricotta cheese, egg, 1/2 cup Parmesan cheese, fresh parsley, salt, and pepper. Mix well.
  4. Spread about 1/2 cup of marinara sauce on the bottom of a 9×13 inch baking dish.
  5. Arrange 3-4 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Top with half of the cooked vegetable mixture.
  8. Sprinkle with 1 cup of mozzarella cheese.
  9. Spoon about 1 cup of marinara sauce over the cheese.
  10. Repeat layers: noodles, remaining ricotta, remaining vegetables, remaining mozzarella, and remaining marinara sauce.
  11. Top with a final layer of noodles, more marinara sauce, and a generous sprinkle of Parmesan cheese.
  12. Cover the baking dish loosely with aluminum foil (you can spray the underside of the foil with cooking spray to prevent cheese from sticking).
  13. Bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and lightly golden.
  14. Let the lasagna rest for 10-15 minutes before slicing and serving.

Notes

For an extra layer of flavor, try adding a sprinkle of red pepper flakes to your vegetable mixture, or serve with a fresh green salad and garlic bread.
