  • 2 cups almond milk (or milk of choice)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup fresh raspberries
  • 1 tablespoon chia seeds
  • 2 tablespoons chopped almonds
  • Optional: a few dark chocolate shavings

Instructions

  1. In a medium saucepan, combine the rolled oats and almond milk. Bring to a gentle boil over medium heat.
  2. Reduce the heat and simmer, stirring occasionally, until the oats are tender and the mixture thickens, about 5-7 minutes.
  3. Stir in honey, vanilla extract, and cinnamon; mix well.
  4. Pour the oatmeal into serving bowls.
  5. Top each bowl with sliced strawberries, raspberries, chia seeds, and chopped almonds.
  6. Optionally, sprinkle with dark chocolate shavings for an indulgent touch.

Notes

For extra creaminess, use coconut milk instead of almond milk, and try adding a dollop of Greek yogurt on top for added protein.
