These Tuscan garlic chicken thighs are incredibly flavorful and easy to make. Tender chicken thighs are simmered in a creamy, garlic-infused sauce with spinach and sun-dried tomatoes for a delicious and satisfying meal.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 5 oz fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Season chicken thighs with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Add garlic to the skillet and cook for 1 minute, until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream and sun-dried tomatoes. Bring to a simmer.
  6. Add spinach and cook until wilted, about 2-3 minutes.
  7. Return chicken thighs to the skillet and simmer for 5-7 minutes, or until chicken is cooked through and sauce has thickened slightly.
  8. Stir in Parmesan cheese.
  9. Serve immediately.

Notes

Serve over pasta, rice, or mashed potatoes for a complete meal. For extra flavor, add a squeeze of lemon juice at the end.
