Turkey Cranberry Quesadillas

Delicious and easy-to-make Turkey Cranberry Quesadillas combine savory turkey with tangy cranberry sauce for a perfect holiday-inspired snack or meal.

  • 4 large flour tortillas
  • 2 cups cooked turkey, shredded
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cranberry sauce
  • 1/4 cup chopped green onions
  • Butter or cooking spray, for the pan

Instructions

  1. Heat a large skillet over medium heat and lightly butter one side of a tortilla.
  2. Place the tortilla, butter-side down, in the skillet.
  3. Evenly spread turkey, cranberry sauce, shredded mozzarella, and green onions over half of the tortilla.
  4. Fold the tortilla over to cover the filling and press gently.
  5. Cook for 2-3 minutes until the bottom is golden brown, then carefully flip and cook the other side until cheese is melted and the quesadilla is crispy.
  6. Remove from skillet, let cool slightly, then cut into wedges and serve warm.

Notes

For extra flavor, add a sprinkle of cinnamon or swap mozzarella for a sharp cheddar cheese. Serve with a side of sour cream or a fresh green salad.
