Tortellini Soup

A comforting Italian-inspired tortellini soup featuring cheese tortellini, savory broth, fresh vegetables, and aromatic herbs. Perfect for a cozy meal any day of the week.

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups chicken or vegetable broth
  • 1 (14-ounce) can diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté until vegetables are tender, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Pour in the chicken or vegetable broth and diced tomatoes with their juice. Stir in dried basil, oregano, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 10 minutes to allow flavors to meld.
  5. Add the cheese tortellini and cook according to package instructions, usually about 3-5 minutes, until tender.
  6. Stir in the chopped fresh spinach and cook until wilted, about 1-2 minutes.
  7. Remove from heat and ladle soup into bowls. Sprinkle each serving with grated Parmesan cheese if desired, and serve warm.

Notes

For extra protein, add cooked shredded chicken or Italian sausage. Serve with crusty bread for a hearty meal.
