Stuffed Beef Tenderloin

  • 1 (2 to 3 lb) beef tenderloin, trimmed
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup goat cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste
  • Kitchen twine

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Butterfly the beef tenderloin by slicing it horizontally, leaving one side intact to create a flap.
  3. Season the inside and outside of the tenderloin with salt, pepper, and rosemary.
  4. In a bowl, combine chopped spinach, sun-dried tomatoes, goat cheese, and minced garlic.
  5. Spread the stuffing mixture evenly over the opened tenderloin.
  6. Carefully roll the tenderloin back up and secure with kitchen twine.
  7. Heat olive oil in an oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned.
  8. Transfer the skillet to the preheated oven and roast for 20-25 minutes or until internal temperature reaches 135°F (medium-rare).
  9. Remove from oven and let rest for 10 minutes before slicing.

Notes

For added flavor, serve with a red wine reduction sauce or garnish with fresh herbs before serving.
