  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup fresh strawberries, chopped
  • ½ cup white chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together oil, egg, vanilla extract, and sour cream until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold until just combined; do not overmix.
  5. Carefully fold in the chopped strawberries and white chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a little coarse sugar on top of each muffin before baking for a crunchy finish.
