  • 1 (20 ounce) package frozen cheese tortellini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook tortellini according to package directions. Drain and set aside.
  2. While tortellini is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute, or until fragrant.
  3. Stir in spinach and diced tomatoes. Bring to a simmer and cook for 5 minutes, or until heated through.
  4. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  5. Add tortellini to the sauce and toss to coat. Serve immediately.

Notes
