These Spinach and Feta Stuffed Sweet Potatoes are a healthy and delicious meal, perfect for a weeknight dinner. The creamy feta and nutrient-rich spinach perfectly complement the natural sweetness of the potatoes.

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 5 ounces fresh spinach
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped red onion
  • 2 tablespoons pine nuts, toasted
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and prick them several times with a fork.
  2. Bake sweet potatoes for 45-60 minutes, or until soft.
  3. While sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds until fragrant.
  4. Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Remove from heat and stir in feta cheese, red onion, and toasted pine nuts. Season with salt and pepper to taste.
  6. Once sweet potatoes are cooked, slice them lengthwise and carefully scoop out some of the flesh, leaving a 1/2-inch border.
  7. Mash the scooped-out sweet potato flesh and add it to the spinach and feta mixture.
  8. Spoon the spinach and feta mixture back into the sweet potato skins.
  9. Return the stuffed sweet potatoes to the oven and bake for another 10-15 minutes, or until heated through.
  10. Serve immediately.

Notes

For a richer flavor, try adding a drizzle of balsamic glaze before serving.
