  • For the Chicken:
  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tbsp sesame oil
  • For the Miso-Ginger Sauce:
  • 2 tbsp white miso paste
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1-2 tsp Sriracha or chili garlic sauce (adjust to taste)
  • 1 tsp honey or maple syrup (optional, for balance)
  • 2 tbsp water or chicken broth
  • For Serving:
  • 2 cups cooked brown or white rice
  • 1 cup steamed broccoli florets or snap peas
  • 1/2 cup shredded carrots
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, grated ginger, minced garlic, Sriracha/chili garlic sauce, honey (if using), and water/broth until smooth. Set aside.
  2. Heat sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  3. Reduce heat to medium. Pour the prepared miso-ginger sauce over the cooked chicken. Stir to coat the chicken evenly and simmer for 2-3 minutes, allowing the sauce to thicken slightly and flavors to meld.
  4. To assemble the bowls, divide the cooked rice among serving bowls. Top with the spicy miso ginger chicken, steamed broccoli/snap peas, and shredded carrots.
  5. Garnish with sesame seeds and sliced green onions before serving.

Notes

For extra texture and freshness, add a sprinkle of chopped peanuts or a squeeze of fresh lime juice just before serving. You can also customize with your favorite vegetables like bell peppers, spinach, or mushrooms.
