Delicious Southwest Ground Beef and Sweet Potato Skillet

This Quick Southwest Ground Beef Skillet is a delicious and easy one-pan meal perfect for busy weeknights. It’s packed with flavor and comes together in just 30 minutes!

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 1 packet taco seasoning
  • 1/2 cup shredded cheddar cheese

Instructions

  1. In a large skillet, brown ground beef over medium-high heat. Drain off any excess grease.
  2. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in black beans, corn, diced tomatoes and green chiles, and taco seasoning.
  4. Bring to a simmer and cook for 10 minutes, or until heated through.
  5. Top with cheddar cheese.
  6. Cover the skillet and let the cheese melt, about 1 minute.
  7. Serve immediately.

Notes

For extra flavor, add a dollop of sour cream or guacamole before serving.
