This Southern Tomato Pie recipe is a summertime classic, featuring juicy tomatoes, creamy cheese, and a flaky crust. Perfect for potlucks or a light lunch!

  • 1 (9-inch) pie crust, pre-baked
  • 4 large ripe tomatoes, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Arrange tomato slices in the pre-baked pie crust.
  3. In a bowl, combine cheddar cheese, mozzarella cheese, mayonnaise, basil, and green onions. Season with salt and pepper.
  4. Spread the cheese mixture evenly over the tomato slices.
  5. Bake for 30-40 minutes, or until the crust is golden brown and the cheese is bubbly.
  6. Let cool slightly before serving.

Notes

For best results, use ripe, locally grown tomatoes. You can also add a pinch of red pepper flakes to the cheese mixture for a little heat.
