Southern Cornbread Poppers

These delicious cornbread poppers are easy to make and perfect for any occasion. Try all 7 variations!

  • 1 cup self-rising cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 large egg, lightly beaten
  • 1 cup buttermilk
  • Optional additions: jalapenos, cheese, bacon, herbs

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a mini muffin tin.
  2. In a large bowl, combine cornmeal, flour, baking soda, and sugar.
  3. In a separate bowl, whisk together vegetable oil, egg, and buttermilk.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fill each mini muffin cup about 2/3 full.
  6. Bake for 12-15 minutes, or until golden brown.
  7. Let cool slightly before serving.

Notes

For a spicier version, add more jalapenos. For a sweeter version, add more sugar.
