Slow Cooker Cowboy Casserole

A hearty and flavorful Slow Cooker Cowboy Casserole packed with ground beef, beans, corn, and cheese, perfect for an easy weeknight dinner.

  • 1 lb ground beef
  • 1 cup frozen corn
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup salsa
  • 1 small onion, diced
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is softened; drain excess fat.
  2. Transfer the beef mixture to the slow cooker.
  3. Add frozen corn, black beans, pinto beans, salsa, chili powder, cumin, salt, and pepper to the slow cooker; stir to combine.
  4. Cover and cook on low for 4 hours, or on high for 2 hours.
  5. About 15 minutes before serving, sprinkle shredded cheddar cheese evenly over the top; cover and cook until cheese is melted.
  6. Serve warm directly from the slow cooker.

Notes

For added flavor, top with sliced jalapeños, chopped green onions, or a dollop of sour cream before serving.
