Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound asparagus, trimmed and cut into 1-inch pieces
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: sesame seeds and chopped green onions for garnish

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and water. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add garlic and ginger and cook for about 30 seconds until fragrant.
  4. Add mushrooms and cook for 5-7 minutes, until softened and lightly browned.
  5. Add asparagus and cook for 3-5 minutes, until tender-crisp.
  6. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through.
  7. Pour the sauce over the shrimp and vegetables and cook for 1-2 minutes, until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Garnish with sesame seeds and green onions, if desired. Serve immediately over rice or noodles.

Notes

For a spicier dish, add a pinch of red pepper flakes to the sauce. Serve over brown rice or quinoa for a healthy and filling meal.
