Sheet Pan Chicken Fajitas are a quick, flavorful one-pan Mexican-inspired dish featuring juicy chicken strips and colorful bell peppers, perfect for an easy weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 8 small flour or corn tortillas
  • Fresh lime wedges (for serving)
  • Fresh cilantro, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
  3. Add the sliced chicken, bell peppers, and onion to the bowl. Toss everything until well coated with the seasoning mixture.
  4. Spread the chicken and vegetables evenly on a large sheet pan in a single layer.
  5. Bake in the preheated oven for 20-25 minutes, stirring halfway through, until the chicken is cooked through and vegetables are tender.
  6. Warm the tortillas in a dry skillet or microwave.
  7. Serve the chicken and vegetables on the warm tortillas, garnish with fresh cilantro and a squeeze of lime juice.

Notes

For extra flavor, serve with guacamole, sour cream, or salsa. You can also add sliced jalapeños for extra heat.
