Easy Seafood Lasagna with Creamy Cheese Recipe

  • 1 pound lasagna noodles
  • 1 pound mixed seafood (shrimp, scallops, crab meat)
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 4 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C). Cook lasagna noodles according to package directions.
  2. In a large saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  3. Reduce heat and simmer for 5 minutes, or until sauce has thickened slightly. Stir in salt, pepper, and nutmeg.
  4. In a medium bowl, combine ricotta cheese, Parmesan cheese, and parsley.
  5. In a 9×13 inch baking dish, spread a thin layer of sauce. Top with a layer of lasagna noodles, followed by half of the seafood, half of the ricotta mixture, and 1/3 of the mozzarella cheese.
  6. Repeat layers, ending with a layer of noodles topped with remaining sauce and mozzarella cheese.
  7. Bake for 30-35 minutes, or until golden brown and bubbly. Let stand for 10 minutes before serving.

Notes

Garnish with fresh parsley and serve with a side salad for a complete meal.
