Ingredients

Scale
  • 1 pound Italian sausage, removed from casings
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 pound pasta (penne, rotini, or your favorite shape)
  • 4 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. In a large skillet, brown the Italian sausage over medium-high heat. Break it up with a spoon as it cooks. Drain off any excess grease.
  2. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant.
  3. Stir in the crushed tomatoes, tomato sauce, oregano, basil, red pepper flakes (if using), salt, and pepper. Bring to a simmer.
  4. Add the pasta and chicken broth to the skillet. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is cooked through and the sauce has thickened. Stir occasionally to prevent sticking.
  6. Remove from heat and stir in the Parmesan cheese.
  7. Garnish with fresh basil leaves and serve immediately.

Notes

For a spicier dish, use hot Italian sausage or add more red pepper flakes. You can also add other vegetables like zucchini, mushrooms, or spinach.
