Roasted Garlic Spinach Flatbread

This Roasted Garlic Spinach Flatbread combines the rich, mellow flavor of roasted garlic with fresh spinach on a crispy flatbread base for a delicious and nourishing meal or snack.

  • 1 pre-made flatbread (8-inch)
  • 1 head garlic
  • 2 cups fresh spinach, washed and chopped
  • 2 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and fresh ground black pepper to taste
  • 1 tsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the top off the head of garlic to expose cloves, drizzle with 1 tbsp olive oil, wrap in foil and roast for 35-40 minutes until soft.
  3. Remove roasted garlic cloves and mash into a paste.
  4. In a bowl, toss chopped spinach with lemon juice, remaining olive oil, salt, and pepper.
  5. Spread the roasted garlic paste evenly on the flatbread.
  6. Layer the spinach mixture evenly over the flatbread.
  7. Sprinkle mozzarella and Parmesan cheeses on top.
  8. Bake flatbread in the oven for 10-12 minutes until cheese is melted and crust is crisp.
  9. Remove from oven, let cool slightly, slice, and serve warm.

Notes

For extra flavor, drizzle with balsamic glaze before serving or add red pepper flakes for some heat.
