This incredibly easy Ritz Cracker Zucchini Cheddar Casserole brings together tender zucchini, sharp cheddar, and a creamy base, all topped with a buttery, crispy Ritz cracker crust. It’s a comforting, family-friendly dish perfect for a weeknight dinner or potluck.

  • 3 medium zucchini, thinly sliced or chopped
  • 1 medium onion, chopped
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (10.5 ounce) can cream of mushroom soup (or cream of chicken)
  • 1/2 cup sour cream (or mayonnaise)
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 sleeve (approx. 34 crackers) Ritz crackers, crushed
  • 4 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the sliced zucchini, chopped onion, 1 ½ cups of shredded cheddar cheese, cream of mushroom soup, sour cream, milk, garlic powder, salt, and black pepper. Mix until all ingredients are well combined.
  3. Pour the zucchini mixture evenly into the prepared baking dish.
  4. In a separate small bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are evenly coated.
  5. Sprinkle the remaining ½ cup of shredded cheddar cheese over the zucchini mixture in the baking dish.
  6. Evenly scatter the buttered Ritz cracker crumbs over the cheese layer.
  7. Bake for 30-35 minutes, or until the casserole is bubbly and the cracker topping is golden brown and crispy.
  8. Let stand for 5-10 minutes before serving.

Notes

For an extra layer of flavor and texture, consider adding cooked, crumbled bacon or diced ham to the zucchini mixture before baking. This casserole pairs wonderfully with roasted chicken or pork tenderloin.
