Delicious Ramen Stir Fry

This quick and easy Ramen Stir Fry is a delicious weeknight meal, perfect for using up leftover vegetables and ready in under 30 minutes. It’s a flavorful and customizable dish that’s sure to become a family favorite!

  • 2 packages ramen noodles, seasoning packets discarded
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell pepper (any color)
  • 1/4 cup sliced onion
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Optional: Cooked chicken, shrimp, or tofu for added protein
  • Optional: Sesame seeds and chopped green onions for garnish

Instructions

  1. Cook the ramen noodles according to package directions, omitting the seasoning packet. Drain and set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the broccoli, carrots, bell pepper, and onion to the skillet and stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger to the skillet and cook for 1 minute more, until fragrant.
  5. In a small bowl, whisk together the soy sauce, brown sugar, and sesame oil.
  6. Pour the sauce over the vegetables and bring to a simmer.
  7. Add the cooked ramen noodles to the skillet and toss to coat in the sauce.
  8. If using, add cooked chicken, shrimp, or tofu to the skillet and stir to combine.
  9. Cook for another 2-3 minutes, or until everything is heated through.
  10. Garnish with sesame seeds and chopped green onions, if desired. Serve immediately.

Notes

For a spicier dish, add a pinch of red pepper flakes or a dash of sriracha to the sauce. Feel free to customize the vegetables based on your preferences and what you have on hand.
