  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the Maple Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Make the Whoopie Pies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, cloves, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in pumpkin puree, egg, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Beat until just combined.
  5. Drop rounded tablespoons of batter onto prepared baking sheets, leaving space between each.
  6. Bake for 12-15 minutes, or until the edges are lightly golden and a toothpick inserted into the center comes out clean.
  7. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  8. Make the Maple Cream Cheese Frosting: In a large bowl, beat together cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, beating until well combined.
  10. Stir in maple syrup and vanilla extract.
  11. Assemble the Whoopie Pies: Spread a generous amount of maple cream cheese frosting on the flat side of one whoopie pie. Top with another whoopie pie, flat side down, to create a sandwich.
  12. Repeat with remaining whoopie pies and frosting.
