These Pumpkin Chocolate Chip Oatmeal Bars are the perfect fall treat! Chewy, delicious, and packed with pumpkin spice flavor, they’re a comforting and easy-to-make dessert.

  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (15 ounce) can pumpkin puree
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, combine rolled oats, flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the vanilla extract and pumpkin puree.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the chocolate chips.
  6. Press the mixture evenly into the prepared baking pan.
  7. Bake for 25-30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool completely before cutting into bars.

Notes

For extra flavor, add 1/2 cup of chopped walnuts or pecans to the batter.
