carolina bbq vinegar shredded chicken

A remarkably simple yet flavorful Carolina BBQ shredded chicken recipe, featuring tender, juicy chicken infused with a tangy vinegar-based sauce perfect for sandwiches or plates.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 ½ cups apple cider vinegar
  • ½ cup water (or chicken broth)
  • ¼ cup packed brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. In an Instant Pot, combine apple cider vinegar, water, brown sugar, Worcestershire sauce, paprika, garlic powder, onion powder, and cayenne pepper (if using). Stir well until the brown sugar is dissolved.
  2. Season the chicken breasts or thighs generously with salt and black pepper, then place them into the Instant Pot, ensuring they are mostly submerged in the liquid.
  3. Secure the lid and set the vent to sealing. Cook on High Pressure for 10-12 minutes for chicken breasts (15 minutes for thighs).
  4. Once cooking is complete, allow a natural pressure release for 5 minutes, then carefully quick release any remaining pressure.
  5. Carefully remove the chicken from the Instant Pot and place it on a cutting board or large plate. Using two forks, shred the chicken into desired pieces.
  6. Return the shredded chicken to the Instant Pot with the cooking liquid. Stir well to coat the chicken in the flavorful sauce.
  7. Serve hot and enjoy!

Notes

Serve this delicious shredded chicken on toasted brioche buns, with a side of creamy coleslaw and pickles for an authentic Carolina BBQ experience. It’s also great over rice or a baked potato.
