Peppermint Patties

Delightfully refreshing homemade peppermint patties with a creamy, sweet mint filling coated in rich dark chocolate—perfect for a cool treat or festive gift.

  • 2 1/2 cups powdered sugar
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons light corn syrup
  • 1 teaspoon pure peppermint extract
  • 1 tablespoon heavy cream
  • 8 ounces dark chocolate, chopped
  • 1 teaspoon vegetable oil (optional, for smoother chocolate)

Instructions

  1. In a large bowl, combine powdered sugar, softened butter, corn syrup, peppermint extract, and heavy cream. Stir until a soft, pliable dough forms.
  2. Turn the dough out onto a surface dusted lightly with powdered sugar. Knead gently until smooth.
  3. Roll the dough to about 1/4 inch thickness and cut into small circles or desired shapes using a cookie cutter or knife.
  4. Place cut patties on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes to firm up.
  5. Melt the dark chocolate in a microwave-safe bowl in 30-second intervals, stirring between each until smooth. Stir in vegetable oil if using for a shinier finish.
  6. Using a fork or dipping tool, dip each chilled peppermint patty into the melted chocolate, coating completely. Allow excess chocolate to drip off.
  7. Place coated patties back onto parchment paper and refrigerate until the chocolate is set, about 20 minutes.
  8. Store peppermint patties in an airtight container in the refrigerator for up to two weeks.

Notes

For a festive touch, sprinkle crushed candy canes on top of the chocolate before it sets or try white chocolate coating for a sweeter variation.
