This Peanut Crunch Salad is a delightful combination of fresh vegetables, crunchy peanuts, and a tangy dressing. It’s a quick and easy salad perfect as a light lunch or a side dish.

Ingredients

  • 4 cups chopped romaine lettuce
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup chopped celery
  • 1/4 cup chopped green onions
  • 1/2 cup roasted peanuts, coarsely chopped
  • 2 tablespoons sesame seeds
  • For the Dressing:
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon peanut butter
  • 1 teaspoon sesame oil
  • 1/2 teaspoon grated ginger

Instructions

  1. In a large bowl, combine the romaine lettuce, red cabbage, carrots, celery, and green onions.
  2. In a separate small bowl, whisk together the rice vinegar, soy sauce, honey, peanut butter, sesame oil, and ginger until well combined and smooth.
  3. Pour the dressing over the salad and toss gently to coat.
  4. Add the chopped peanuts and sesame seeds to the salad and toss again.
  5. Serve immediately.

Notes

For an extra protein boost, add grilled chicken or tofu to the salad.
