These peach crumble bars are the perfect summer treat! They’re easy to make, bursting with fresh peach flavor, and have a delicious crumble topping.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 cups peeled and diced fresh peaches
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, oats, brown sugar, baking soda, and salt.
  3. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a small bowl, whisk together egg and vanilla extract. Add to the flour mixture and stir until just combined.
  5. Press half of the mixture into the prepared baking pan.
  6. In a medium bowl, combine peaches, granulated sugar, cornstarch, and cinnamon. Toss to coat.
  7. Spread peach mixture evenly over the crust.
  8. Crumble the remaining flour mixture over the peaches.
  9. Bake for 30-35 minutes, or until the topping is golden brown and the peaches are bubbly.
  10. Let cool completely before cutting into bars.

Notes

For best results, use ripe but firm peaches. You can also add a sprinkle of chopped nuts to the crumble topping.
