  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup ditalini pasta
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the olive oil, onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Add the garlic, oregano, basil, and red pepper flakes (if using). Cook for 1 minute more, until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in the ditalini pasta and cook according to package directions, usually about 8-10 minutes, or until the pasta is tender.
  6. Stir in the Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley and extra Parmesan cheese.

Notes

For a richer flavor, use a combination of sweet and hot Italian sausage. You can also add other vegetables like spinach or zucchini during the last few minutes of cooking.
