One-Pot Macaroni Cheeseburger

Enjoy a comforting family favorite with minimal cleanup! This easy one-pot macaroni cheeseburger combines savory ground beef, tender pasta, and creamy cheese sauce for a hearty dinner that’s sure to bring smiles.

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups milk (any kind, 2% or whole recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1 box (16 ounces) elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese (or more cheddar)
  • Optional: 2 tablespoons ketchup or mustard for flavor

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in beef broth and milk. Stir in salt, black pepper, smoked paprika, and garlic powder. Bring the mixture to a boil.
  4. Add elbow macaroni to the boiling liquid, stirring well to ensure it’s submerged. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is tender and most of the liquid is absorbed, stirring occasionally to prevent sticking.
  5. Remove from heat. Stir in shredded cheddar cheese and Monterey Jack cheese until melted and creamy. If using, stir in optional ketchup or mustard.
  6. Serve hot and enjoy!

Notes

Garnish with chopped fresh parsley, green onions, or a dollop of sour cream for extra flavor and freshness. A sprinkle of crumbled bacon or diced pickles can also elevate the cheeseburger experience!
