Ingredients

Scale
  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 12 oz penne or ziti pasta, uncooked
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped (for garnish, optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken cubes, season with salt and pepper, and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  2. Add chopped onion to the pot and cook until softened, about 3-5 minutes, scraping up any browned bits from the bottom. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Bring the mixture to a boil.
  4. Add the uncooked pasta to the pot, stirring well to ensure it’s fully submerged. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  5. Return cooked chicken to the pot. Stir in Parmesan cheese and mozzarella cheese until melted and well combined.
  6. Remove from heat and let stand for 5 minutes before serving. Garnish with fresh basil and extra Parmesan cheese, if desired.

Notes

For an extra layer of flavor, consider adding a pinch of red pepper flakes with the garlic for a subtle kick.
