This One Pan Dairy-Free Creamy Garlic Shrimp is a quick and easy weeknight dinner that’s packed with flavor. Tender shrimp are cooked in a luscious, dairy-free garlic cream sauce, all in one pan for easy cleanup!

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup dairy-free milk (such as almond or oat milk)
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat.
  3. Add garlic and cook for about 30 seconds, until fragrant. Be careful not to burn it.
  4. Stir in dairy-free milk, nutritional yeast, lemon juice, oregano, and red pepper flakes (if using). Bring to a simmer, stirring constantly.
  5. Season with salt and pepper to taste.
  6. Add the shrimp to the skillet in a single layer.
  7. Bake for 8-10 minutes, or until shrimp are pink and cooked through.
  8. Garnish with fresh parsley and serve immediately.

Notes

Serve over zucchini noodles, rice, quinoa, or pasta for a complete meal. Add some steamed broccoli or asparagus to the pan during the last 5 minutes of baking for extra vegetables.
