Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups vegetable broth
  • 1/4 cup dry sherry (optional)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add mushrooms and onion and cook until softened and browned, about 8-10 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly.
  5. Gradually whisk in vegetable broth until smooth.
  6. Stir in sherry (if using), thyme, salt, and pepper.
  7. Bring to a simmer and cook, stirring occasionally, until the gravy has thickened, about 5-7 minutes.
  8. Stir in parsley and serve immediately.

Notes

For a richer flavor, use beef broth instead of vegetable broth. You can also add a splash of cream at the end for extra creaminess.
